Garlic & Herb Lobster Tails

Chicken and mushroom sauce

Ingredients

2 6oz lobster tails

4 tablespoons unsalted butter

1 clove garlic minced

1 tablespoon chopped parsley

1/2 tablespoon chopped chives

Dash of Tabasco Sauce

Kosher salt and ground pepper

Lemon wedges to serve


Method

Preheat oven to 350 degrees F.

Split lobster tails in half lengthwise. With the cut side up, using kitchen scissors, carefully cut along the edge of the shell to loosen the lobster meat. In a small bowl blend together the butter, garlic, herbs, Tabasco sauce and salt & pepper. Brush the lobster meat with the butter mixture. Place on a baking sheet and bake approximately 15 minutes or until an instant- read meat thermometer registers an internal temperature of 140 to 145 degrees F. Baste the lobster with any remaining butter mixture half way through cooking time.

Take care not to overcook or the lobster will become tough and rubbery!

Serve with lemon wedges.
